Safety Reminder - It has come to our attention that several drivers are ignoring our stop sign on the lower level crosswalk. Although it is a small stop sign, it is none the less a STOP SIGN and in our school zone. It is not a 'yield to pedestrians in crosswalk' sign. Please come to a complete STOP when approaching this crosswalk. The safety and welfare of our kids is our top priority. Thank you.
Teacher Spotlight - Hey RMAE! I am Candy Taber (aka Mrs. T, Mrs. Taber, Warden Taber—so named affectionately by my fabulous 4th graders), and this is my third year at RMAE as a teachers’ aide. Currently I serve grades one thru five, helping with everything from enrichment, to extra help in school work, to policing sidewalks for “proper sidewalk behavior.” I have enjoyed every minute being a member of this wonderful school community. When I’m not at school, I’m spending time with my husband (Mr. T) and three teenage sons (two sons actually, since we successfully moved son #1 to college this past fall) on the slopes, in the gym for basketball, or at the baseball field. We moved to Evergreen almost six years ago from Wisconsin. Suffice it to say, we love brats, cheese, and the Green Bay Packers. Go Pack!

Roasted Veggie Tacos With Chipotle Sauce
There is something so comforting about Mexican Food, in particular Tacos. So much so, that Taco Tuesday has become a nationwide event. This recipe features a simple assortment of roasted vegetables: peppers, onions, and zucchini. Feel free to add your favorite veggies like portabello mushrooms, cauliflower, kale, and yes, even carrots! As well as, adding your favorite meat.
It’s all about the sauce… I am particularly excited about this Chipotle dressing because it's made with such clean and healthy ingredients. Usually, creamy sauces like this in the restaurants are made with mayonnaise as its base, but this sauce uses cashews, which is the main ingredient in making it creamy.
If you are not particularly fond of the smoky flavor, you can use the same base, and switch up the chipotle for fresh cilantro and cumin (and jalapeno if you like a little kick), swap the lemon for lime, and you have yourself a fresh cilantro lime cream sauce!
Tacos
- 1 large red onion cubed about 1/2"
- 1 large yellow or red bell peppers seeded and cubed about 1/2"
- 2 medium zucchini cubed about 1/2"
- 6 Corn tortillas
- 2-3 large leaves lettuce chopped, or use alfalfa sprouts
Chipotle Sauce
- 1/2 cup cashews
- 1/2 tsp chipotle chili powder or more to your liking
- 2 Tbl tomato paste
- 2 tsp lemon juice
- salt to taste
Instructions:
Tacos
- Preheat oven to 400 degrees.
- Combine the chopped veggies on a lightly sprayed cookie sheet. Salt and pepper.
- Place into preheated oven and roast until they begin to brown and are softened about 20 minutes. Watch carefully.
- To assemble: place grilled veggies into warmed tortillas, top with avocado slices, chipotle sauce, and lettuce or alfalfa sprouts.
Chipotle Sauce
- Soak the cashews in 2/3 cup warm water for 30 minutes or more to soften. Rinse and set aside.
- Add them plus 2/3 cup fresh water to a high-powered blender and blend slowly at first and then on high until they are smooth.
- Add the chipotle chili powder, tomato paste, lemon juice and salt and blend until well combined. Pour into a small container for later.
- Serve with black beans.
- Feel free to add your own choice of meat.

After School Activities
Woodworking Club - Do you like to build things? Like working with tools? Okay with getting dusty? Then join Fine Woodworking Club! Mr. Dunbar will host this weekly after school program in the RMAE wood shop. This semester there will be both an Introduction and an Advanced section. Intro will take place on most Mondays and Advanced will take place on Tuesdays. The Advanced section will be reserved for students who have taken a woodworking class with Mr. Dunbar previous to this semester. There will be 10 total classes for the Intro Section and 8 for the Advanced Section. This club will be open to 5 students per section, in 5th to 8th grade. Classroom News
2nd Grade - Having fun with their Chinese lion masks.
4th Grade - In the fall our school was gifted with some fabulous microscopes that both film and connect with the Smart board. this allows all students to have a fabulous view under the microscope!
We are currently studying both plant and animal cells. What better to see than a sample of "Green House Water!" CeCe Johns helped gather a lovely sample swimming with life!
The students took notes and observed both plant and animal cells. They saw single cell paramecium and amoeba, as well as chains of plant cells in an ocean of one single drop of water. Students were amazed by the life contained in one drop. They created observations, and asked a lot of "Next Questions." Life is amazing on all levels.
6th Grade - We're learning about the phases of the moon using Oreo cookies!
